Sexy Food: Stratton’s Spinasse Celebrates Four Years With Special Menus

Revisit old favorites and experience what’s next.

Spinasse splashed onto the Capitol Hill scene four years ago this month and quickly became Seattle’s go-to for classic Piedmontese cuisine. With award-winning Chef Jason Stratton at the helm, this restaurant boasts lines out the door and the most toothsome tajarin this side of Italy. But never one to rest on his laurels, Stratton is celebrating the milestone birthday with several special menus introduced each week until the end of August, the next of which hits tables August 19th.

The menus will reflect classic diner favorites from the past four years as well as new dishes that give guests a sneak peek into what the future at Spinasse holds. Anniversary dinners are priced at $65 per person with a choice between two optional wine pairings for an additional $30 or $55. The $30 pairing features approachable, hand-selected sommelier favorites that are designed to complement the menu, whereas the $55 tasting showcases reserve wines.

Here is a sampling of what Stratton has up his sleeve for the rest of this very special month:

Week of August 19th

Salted buttermilk panna cotta with heirloom tomato, salmon roe and poppy-seed
Eggplant in carpione with spot prawns and pine nut sauce
Melon and prosciutto risotto
Salmon with braised plum, prune, tremiti olive and basil
Sweet corn and goat cheese mousse with blueberries

Week of August 26th

Roasted peppers with anchovy, egg and buckwheat grissini
Eggplant flan with cherry tomatoes
Tajarin with braised geoduck and zucchini
Qualicum scallops “in umido” with sweet corn, verjus and arugula
Chocolate crespelle with nectarines
