Food Porn: Trace Seattle

Fresh Pacific Northwest food with contemporary Asian influence.

In this edition of Food Porn, we feature Trace Seattle, located on 4th Avenue in the W Hotel. With floor-to-ceiling windows, modern decor, and beautiful lighting, Trace is aesthetically stunning. The menu is equally impressive with a showcase of local, organic seafood, fresh sushi, and creative cocktails.

Chef de Cuisine, Steven Ariel, was raised in Hawaii where his passion for food and wine began and continued his studies internationally in Thailand. In 2006, he moved to Seattle and has worked at notable restaurants, including Canlis, Cafe Juanita, and LUC. Chef Steven’s training and experiences have helped to cultivate the menu at Trace.

The sushi bar offers a selection of fresh nigiri, sashimi, and specialty rolls. Specialty rolls include the Trace Roll with dungeness crab, torched spicy tuna, chives, garlic, chili aioli, and jalapeno salsa and the Emerald City Roll with cucumber, avocado, unagi, spicy albacore, roasted garlic, eel and miso sauce.

A delicious and light small part is the Ahi Poke Chirashi with harissa avocado, crispy wonton, and ramp oil. The Crispy Egg & Foraged Mushrooms with Yakima asparagus and a shallot vinaigrette is a umami-filled celebration of seasonal ingredients. For entrees, Diver Scallops seared to perfection is served with English peas, mushroom tortellini, and braised daikon. Trace also features Wild Caught Salmon, Smoked Pork Chop, and Pepper & Espresso Wagyu Flat Iron Steak.

For dessert, don’t miss the warm Bing Cherry Tart, with pistachio gelato and a mint meringue. The Yuzu Mousee Green Tea Cake is a unique and subtly sweet Asian-influenced dessert served with toasted rice gelato to end an elegant meal.

Breakfast is served daily from 6:30-10:30AM and brunch on the weekend from 7AM-2PM. Happy Hour runs daily from 4-7PM and 10PM-midnight. $5 happy hour bites include Soy Bean Hummus with grilled eggplant and house made crackers as well as Northwest Oysters served with a rhubarb mignonette, and Painted Hills Short Rib Sliders served with a watercress salad on sesame buns. Drink specials feature $6 red and white wines and $7 well drinks.
