Food Porn: French Vietnamese Cuisine at Stateside

A little old, a little new.

Stateside is a new French Vietnamese restaurant at the base of Capitol Hill opened by chef/owner Eric Johnson. The wood furniture, distressed blue walls and ceiling fans is a sultry mix of old and new. It feels like a secret escape from the humidity of the tropical heat outside. The atmosphere is airy and casual, perfect for a date or an intimate dinner with friends. The food elevates Vietnamese cuisine to something that hasn’t been done in Seattle—sophisticated, yet approachable and comforting.

Curried Pumpkin and Soft Bean Curd: the spices in this dish reminded me on an Indian curry. It was warm, the pumpkin was the right texture, and there was plenty of sauce to smother on rice.

Chili Cumin Pork Ribs: from the first bite to the last, these are finger-lickin’ good. They had me saying “mmmm.” The pork was tender, moist, and the chili cumin crust was crunchy and intensely spiced.

Cha Ca La Vong: the black cod in this vermicelli noodle bowl is buttery, flaky, and cooked to perfection.

Bun Cha Hanoi: pork patties and belly with imperial rolls vermicelli noodle bowl. The patties were juicy and flavorful with a round grilled flavor. I would order this dish just for that pork. The imperial rolls were disappointing; something was off with the filling– it just didn’t taste quite right.

Cinnamon Parfait: layers of frozen cinnamon souffle, coconut tapioca pearls, cocoa sorbet and toasted nuts.

Exotic Fruit Selection: fresh cut jackfruit, pomelo, rambutan, dragonfruit with a divine jasmine sorbet. Not usually a fan of tea-infused desserts, but I could have a pint of this refreshing and light sorbet. It’s unique to see fruit for dessert and it’s absolutely lovely.
