About Catherine Giudici

A proud Coug, she graduated from WSU with a B.A. in Advertising going on to the likes of Wexley School for Girls, Seattle Weekly and Taco Del Mar “Corporate”. After eating copious amounts of exotic—and not so exotic—meat on a trip to Kenya, Catherine returned to the States craving anything and everything without a face. The vegan affair began and after four years, she’s a self-proclaimed “opportunistic vegan”, cheating on her lover for very special occasions. Catherine reps 206 on the daily and has been for 20 years. Like a true Seattleite, she owns Birkenstocks, rides the Metro and loves the smell of rain.

With live music, a card-only photo booth, vegan fare, and games galore, this Capitol Hill joint channels the great Maximus and screams “Are you not entertained?!” Normally, when a vegan walks into a bar they barely have any options to nosh on. This U-District eatery will politely grab you by the hand, then smack you in the face with flavor. You’ve probably passed by this place while you were in the University District; housing a nice corner spot on NE 45th St. Next time, stop in. Meatless Mondays: El Chupacabra
A tude-tastic Mexican vegan spot in Phinney Ridge. I’ve heard rave reviews from non-vegans about El Chupacabra in Phinney Ridge, so I was happy to give it a try. The ambience is like Cha Cha Lounge, just less seizure-ific. Come at night to enjoy their jukebox and cool colored lights. They’ve got a killer drink list and a tasty little zone, but the vegan options are nothing to brag about. (more…)
